Peanut Butter cookies (makes approximately 20 cookies)
Preparation time is 15 minutes and cooking time is 8-10 minutes
Ingredients
180g (2 cups) quick cook oats
125g (½ cup) peanut butter
300g (1 ¼ cups) mashed ripe banana
Pinch of salt (1/8 tsp)
Method
Set oven to 180 degrees C.
Cover a baking tray with a sheet of baking paper.
Peanut Butter Power Cookies - Mash bananas in a medium mixing bowl. Add the rest of the ingredients and stir to combine.
Take one tablespoon of the cookie dough and place it on the baking paper, repeat until all the cookie dough is used.
Use a spatula or the back of a spoon to slightly flatten the cookie dough.
Place the baking tray into the oven and allow to cook for 8 - 10 minutes.
Remove from the oven and cool.
Will keep fresh in an airtight container for up to 5 days or can be frozen for up to 3 months.
Great for lunch boxes and snacks.
Great nutrition for kids.
No added sugar, and it is gluten and dairy free!

Cost will vary depending on the products purchased. This calculation is based on my purchases made in the local supermarket and fruit & vegetable market in September 2020.
Oats – 180g required, purchased 800g for 350VT = 79VT
Peanut butter – 125g, purchased 340g for 160VT = 59VT
Bananas – 300g (approximately half a hand of small bananas, purchased for 100VT = 50VT
Salt – I had this in my store cupboard
Total cost = 188VT, or 19VT per serve of two cookies.
